The Versatility of Wraps & Basil Pesto Recipe

Wraps are a great way to feed your family leftovers for lunch. With a bottle of pasta sauce, pesto or grated cheese you can create some winning combinations.
My current favourites are:
Chicken, basil pesto and roasted vegetables such as butternut, onions and carrots
Sausage with homemade pasta sauce and feta cheese
Steak with cream cheese and red pepper pesto.

This is a great recipe for Basil Pesto using macadamia nuts, rather than pine nuts.
1/4 clove of garlic finely chopped
1 cup of fresh basil
1/3 cup macadamia nuts
1/3 cup grated Parmesan cheese
extra virgin olive oil
black pepper
1/2t lemon juice

Place the basil and garlic in a food processor. Pulse until combined. Add the nuts and process again. Place in a bowl and add half the Parmesan. Add just enough oil to bind the mixture. Add some pepper, lemon juice and then add the remaining Parmesan. Stir and add more olive oil if required.
Pour into a sterilised bottle and store in the fridge.

Rather than use ready grated Parmesan, grate fresh Parmesan and place on a baking tray. Store in the fridge for 2 days while is dries out slightly.
