Tandoori Style Chicken Breasts

2 cloves garlic
3T grated root ginger
1t chili powder
1t ground coriander
1t ground turmeric
2t ground cumin
Juice of 1 lemon
125ml plain yoghurt
4 chicken breasts

Combine all the ingredients in the blender to make the marinade. Make 3 cuts in each chicken breast and spread over the marinade. Cover the baking dish and chill in the fridge over night.
Preheat the oven to 180C. Bring the chicken to room temperature and bake for 40-45 minutes.

Alternatively cook these on a grill or barbecue.

Serve with a potato and onion bake and salad, couscous, baked vegetables or a potato salad.

Easy Potato and Onion Bake

Peel and slice enough potatoes to fill your oven dish. Add 1 chopped onion cooked in olive oil until translucent. Add to the the baking dish. Pour over single cream to cover and bake at 200C for 1hour or until the potatoes are soft and cooked. Add grated cheese and bacon for a truly decadent dish.
