Chicken, Cheese and Apple Salad

SERVES 2 - 4

INGREDIENTS:

1 cos lettuce, washed and dried
2 smoked chicken breasts, sliced
200g Gouda, sliced
2 red apples, sliced
Watercress or rocket
125 ml sliced sugar snap or mange tout peas

DRESSING
5 ml hot English mustard
30 ml honey
60 ml olive oil
30 ml lemon juice
1cm piece ginger, grated
15 ml soy sauce
Salt and freshly ground black pepper to taste

METHOD:
Arrange the lettuce, chicken, cheese and apple on a platter. Scatter watercress and peas over lettuce. Shake together the ingredients for the dressing until thick. Pour over the chicken. Serve with freshly baked bread and butter. Add cranberries, grapes, avocado or pecan nuts for a variation.
