Orange and Oat Biscuits

Oat Squares – makes 20 squares
These biscuits are pressed into a baking tray and cut into squares once baked, and are very easy to make. They have a tangy orange flavour and are ideal for lunch boxes or afternoon snacks and can be enjoyed by Mom too.
1 cup brown flour
1½ cup old fashioned porridge oats
2/3 cup coconut
½ cup light brown sugar
50ml orange juice
Rind of ½ orange
2T golden syrup
1t bicarbonate of soda
150g butter
Preheat the oven to 170C.
Melt the butter and the syrup.
Dissolve the bicarb in the orange juice and add to the melted butter.
Mix the flour, oats, coconut, sugar and orange rind in a large mixing bowl. Add the butter mixture and stir well.
Press into a greased baking tray measuring 20 x 30cm and bake for 30 minutes until golden brown.
Allow to cool slightly before cutting into squares. Remove from the baking tray once cooled and store in an airtight container.
