Sparkling Granita
Ice, pure fruit and fizz - a winning combination
250ml sugar
500ml water
400ml pureed fruit such as raspberries, peaches, lychees, mango or strawberries
juice of a lime (or small lemon)
Sparkling wine - prosecco is great for this
place the sugar and water in a saucepan. Dissolve the sugar over a low heat and allow to cool. Stir in the pureed fruit and lime juice. Pour into a shallow container and place in the freezer. Remove from the freezer and run a fork through the mixture to break it up into ice crystals. Spoon into martini glasses and pour over the sparkling wine.
serves 4-6.
