Aromatic chicken with cashew nuts

1.5 kg chicken pieces cut into cubes
2T butter
2T Olive oil
2 red onions sliced
1 clove garlic finely chopped
1T grated fresh ginger
1/2t chilli powder
1t coriander
1t cumin
1t turmeric
1 x 400g coconut milk
1 cup chicken stock or water
150g roasted cashew nuts

Heat the butter and oil in a pan and brown the chicken pieces. Add the onion, garlic and ginger to the pan and simmer for 3-4 minutes over a moderate heat. Stir in the coconut milk, spices, salt and pepper to taste. Reduce the heat and simmer for 30-35 minutes.
Ground 100g cashew nuts in a blender and add to the pan. Mix in the ground nuts and simmer for 5 minutes. Garnish with the remaining nuts, fresh parsley or coriander, and fresh coconut. Serve with basmati rice and mange tout.
