Chicken and Mushroom Casserole
This easy dish is flavoured with sour cream
1kg chicken pieces
1-2t paprika
1 red onion chopped
1 clove garlic crushed
250g sliced mushrooms
50ml flour
1 cup chicken stock
1/2 cup sour cream
25 ml soy sauce
25ml chutney
Dust the chicken pieces with paprika. Fry in olive oil until brown. Place in a large baking dish.
In the same pan cook the onion, mushrooms and garlic. Stir in the flour and slowly add the stock. When thickened remove from the stove and add the remaining ingredients. Pour over the chicken pieces and bake at 160C for 1 1/4 hours or until cooked.
Garnish with fresh parsley and serve with brown rice and mange tout peas.
