Pork Tenderloin with Apples and Cider
This delicious meal combines pork, apples
and apple cider to make a delicious sauce. Serves 4
550g pork tenderloin
75g butter
2T brown sugar
3 apples sliced
Juice of ½ lemon
3T apple cider
100ml chicken stock
100ml cream
Heat the oven to 200C.
Season the pork and brown in a large frying
pan. Place the meat in the oven to cook for 20 minutes or until cooked to your
liking.
Melt the butter and add the sugar in a
frying pan. Once the sugar has melted, add the apples, lemon juice, cider, and
stock. Cook over a medium heat until the apples have softened. Turn down the
heat and add the cream. Season as required. Pour over the sliced pork to serve.
Serve with brown rice and green beans.
