Chicken Breast stuffed with Cheese and rolled in Bacon
A very easy meal that will delight both your family and friends. Serves 4.
4 chicken breasts
150g Boursin cheese or similar
8 rashers of bacon
8 sun-dried tomatoes
100ml white wine or chicken stock
500g new potatoes
2T wholegrain mustard
1T butter
Preheat the oven to 200C.
Prepare each chicken breast by making a pocket with a knife. Stuff this with a piece of cheese and 2 sun-dried tomatoes. Wrap each breast in 2 rashers of bacon. Place in a baking dish. Mix 1T mustard with the wine and pour over the chicken. Bake for 25 minutes.
Place the potatoes on to boil. When ready place them in a colander and shake them around to fluff up the edges. Mix the mustard and butter and pour over the potatoes. Garnish with chopped parsley.
Cook 2 cups of mange tout peas to serve with your meal.
