Crab and Sun-dried Tomato Linguine

This quick and easy recipe has a depth of flavour from the tomatoes and pesto, and coats the linguine to make a comforting meal.

4T soft butter
1 red onion chopped
1t fresh ginger minced
230g white crab meat
40g sun-dried tomatoes
2T sun-dried tomato pesto
1 cup cream
500g cooked linguine

Put the linguine on to cook. Drain when cooked. Reserve 1T of the pasta water for the sauce.
In a pan melt the butter, add the onion and ginger and cook. Add the crab meat, pesto and cream. Simmer for 5 minutes. Add the sun-dried tomatoes and parsley. Add 1T of the pasta water and stir, then add the drained linguine.
Serves 6.
