Oriental Pork Salad


This recipe uses authentic Asian ingredients to produce a delicious salad. Serves 4.

500g pork loin steaks
6T hoisin sauce
2T Sichuan peppercorns crushed
300g vermicelli noodles cooked
4T spring onions chopped
250g sugar snap peas sliced
200g bean sprouts
100g radishes sliced
2 large carrots peeled and paired into ribbons with a veggie peeler
Zest and juice of 2 limes
2T brown sugar
1 red chilli sliced and seeded if you prefer (optional)
2T sesame oil
1T sunflower oil
4T light soya sauce

Marinate the pork overnight in the hoisin sauce and peppercorns.
Heat a pan to medium heat and cook the pork. Allow to rest for 10 minutes before slicing.
Mix the lime juice and zest, sugar, chilli, oils and soya sauce. Toss the noodles in the dressing. Add the remaining ingredients and toss. Garnish with fresh coriander.
