Italian Inspired Sirloin Salad

The ingredients in this salad are often included in Italian recipes. This salad is a prelude to spring, but is meaty enough for a man to enjoy too! Followed by a tiramusu, this would make a wonderful Italian inspired lunch.
Serves 4

400g sirloin steak
salt and pepper
1T olive oil
2T balsamic vinegar
300g baby tomatoes
3T basil
400g cannellini beans

Season the steak and marinade in olive oil and balsamic vinegar for 15 minutes. Cook the steak to your liking on a griddle pan. Allow to rest and slice.

Make up the dressing using:
3T extra virgin olive oil
1T white wine vinegar
1t minced garlic
1t finely chopped chili
1t brown sugar
1T finely chopped parsley
salt and pepper to taste.

Combine the beans and tomatoes and pour over the marinade. Add the steak and basil. Garnish with some Parmesan shavings and serve with a load of ciabatta bread.

Banting: replace the cannellini beans with courgettes, broccoli or cauliflower. For the dressing replace the sugar with mustard.
