Easy Ham and Potato Quiche
This is a very easy recipe, without sacrificing the taste of a delicious quiche. Serves 4-6
Pastry
5T cold butter
1 cup flour
1/2 cup cheddar cheese grated
1 egg yolk
3T iced water
Filling
4T mascarpone cheese
4T grated Parmesan cheese
2 potatoes cooked, peeled and sliced
2 eggs
1 cup cream
4 slices ham, cubed
Preheat the oven to 180C.
Place the butter, flour and cheese in a food processor. Blend until the mixture resembles bread crumbs. Add the egg yolk and pulse until it comes together. Add the water one tablespoon at a time until the pastry is shiny, but not wet. You may not need to use all the water. Line a 20cm pie dish.
Layer the potatoes, ham, Parmesan and mascarpone cheese. Mix the eggs and cream with 1t dried mixed herbs and salt and pepper. Pour into the pie crust and bake for 50-60 minutes. Serve with your favourite salad.
