Banting Style Picante Grilled Salmon
This recipe can be cooked on a grill or in the oven. A hot oven or grill pan is essential to keep the flavouring on the salmon. Serves 4.
4 salmon fillets
2t ground cumin
1t ground coriander
1/2t paprika
2T lemon thyme leaves
2 cloves garlic crushed
1t lemon zest
2T olive oil
salt and pepper to taste.
Mix the cumin, coriander, paprika, thyme, garlic, lemon zest and olive oil together. Rub over the salmon fillets. Season to taste. Place skin down on an oven try and cook at 220C for 10 minutes or skin down on a griddle pan and cook until pale pink all the way through.
Serve with lemon or lime wedges and a cucumber and mint salad.
Use a potato peeler to slice the cucumber. Add a handful of chopped mint leaves. Add salt and pepper. Pour over 1T of olive or avocado oil and 1T white balsamic vinegar.
