The Easiest Coconut Pie
This unlikely combination of ingredient yields a pie with a crusty bottom, custard in the middle and coconut on top.
100g coconut
450ml milk
1t vanilla extract
4 eggs
50g flour, sieved
1/2t baking powder
225g castor sugar
50g butter or margarine
Preheat the oven to 180C.
Place all the ingredients in a blender and mix with 1/2t salt until combined.
Pour into a 23cm lightly greased pie dish.
Bake for 45minutes to an hour until set.
Serves 4-6. Delicious with vanilla ice-cream.
