Scones for Tea
The easiest scone recipe - when guests arrive unexpectedly for tea
2 cups flour
2t baking powder
1 cup cream or buttermilk
2 eggs beaten
pinch of salt
Preheat the oven to 220C.
Sift the dry ingredients. Mix the eggs and buttermilk. Pour the wet ingredients into the dry ingredients and mix until just incorporated. Dust your rolling surface with flour. Coat the mixture with flour and using your hands level out the mixture until 3cm thick. Cut out scones with a large cutter. Place on a greased baking tray and bake for 10 minutes. Makes 8.
Serve with your favourite jam or preserves and clotted cream.
