Orange Chocolate and Pecan Nut Cake

This single layer chocolate cake decorated with pecan nuts can be used as a pudding or cake for tea. It is delicious on its own or served with ice-cream, vanilla cream or mascarpone. I have been baking this for more than 20 years.



Ingredients
125g butter
250g sugar
3 eggs
1/2t vanilla extract
25g cocoa
95g flour
1/2t salt
100g pecan nut halves
zest of an orange

Cream the butter and sugar until light and fluffy. Gradually add the beaten eggs and vanilla. Stir in the orange zest. Sift the flour, cocoa and salt. Fold into the mixture in thirds. Pour into a fluted 20cm pie dish with a loose bottom. Arrange the pecan halves in circles until the top of the cake is covered.
Bake at 180C for 30-35 minutes.
