It's all about Pavlova

Need an alternative to using cream on a Pavlova? Try this mascarpone cream recipe:

1 cup mascarpone cheese
3T icing sugar
1t vanilla extract

Mix the ingredients together and spoon over a pavlova base. Top with your favourite fruit.

Lemon Filling

For a tangy lemon filling, mix a cup of mascarpone cheese with half a cup of lemon curd and top with blueberries.

Strawberry drizzle sauce:
Spoon over this easy strawberry sauce.

Slice a cup of fresh strawberries. Place in a bowl with 1T caster sugar and 1t balsamic vinegar. Leave for an hour.Drizzle over pavlova slices and serve. (Puree the strawberries for a smoother sauce).

Peach Fruit Topping:

Make a fruit  topping by peeling and slicing 3 peaches. Place in a saucepan with 1 cinnamon stick, 2 whole cloves and 1 cup semi-sweet sparkling wine. Bring to the boil and then turn down to a simmer for 10 minutes. Allow to cool, strain off the liquid and place the peaches on top of the mascapone cream
