Time Saving Berry Jam
I often make jam with berries from my garden. When I came across this recipe in Good Housekeeping magazine for jam made in 10 minutes I gave it a try and it works! This is not the the sugary glossy version of jams cooked on the stove and to which lemon juice is added, but a low sugar, intensely berry flavoured one. Delicious on scones or croissants.
2 cups of berries (I used strawberries chopped into pieces but you could leave them whole)
1/3 cup granulated sugar
Mix the sugar and strawberries in a microwave proof bowl. Mash them gently to release the juices. Microwave on high for 10 minutes, stirring half way through. Pour into sterilsed jars.
This makes enough for 1 commercial size jam jar.
