Red Pesto and Cheese Chicken Rolls

These chicken wraps are perfect for picnics and a casual meal. The flattened chicken acts as a wrap to which you can add your filling as suggested, or make your own. Perfect for those who are pursuing a no or low carb lifestyle.

6 chicken breasts
fresh basil or your favourite herb
125g red pesto such as red pepper or sundried tomato
125g cheese slices such as mozzarella or halloumi
125ml white wine

Preheat the oven to 180C.
Flatten the chicken breasts and place each of them on a piece of foil shiny side up. Layer the herbs, pesto and cheese on each piece of chicken. roll them up, then roll the foil around each breast and twist one side closed. Pour equal amounts of wine into each foil parcel and twist the remaining side to seal the parcels. Place on a baking tray and cook for 20 minutes.
Serve with a salad or roasted vegetables.
