Cheats Bearnaise Sauce
This recipe is from Justine Drake. I saw her make it on her show and have used it time and time again for breakfast. Serve with smoked salmon and scrambled eggs or over poached eggs and steamed asparagus. Delicious and for those who are Banting! You need a good whisk for this recipe.
100g butter
1T lemon juice
1T tarragon vinegar
2 egg yolks
1t freshly chopped chives (optional)
Melt the butter and take off the heat. Add the lemon juice and vinegar and whisk together. Beat the egg yolks with 1T of melted butter. Then beat the eggs into the rest of the butter. Whisk until thick. Serve immediately.
