Banting Mushroom Sauce
This recipe can be used as a base to make any sauce. It is easy to make and breaks the monotony of a grilled steak, chop or chicken breast.
1T butter
1 cup sliced mushrooms
1 large shallot or half a finely chopped small onion
1T dry white wine
1 cup double cream
Melt the butter and fry the onion. Add the mushrooms and cook. Add the whine and cream and reduce the liquid by half, stirring intermittently. Add salt and pepper to taste.
Variations: replace the mushrooms with half a cup of grated hard cheese or chopped soft cheese such as brie or Camembert.
Add your favourite colour peppercorns.
