Wholesome Muesli Biscuits that can be adapted for a Banting Snack
These muesli bars are packed with goodness, and only contain a third of a cup of wholewheat flour and a quarter of a cup of honey. If you use muesli that contains no sugar, you will lower the carbohydrate content further. This is the perfect recipe to experiment with - replace the nuts with seeds and the cranberries with dried blueberries that are sweetened with apple juice and not sugar, or omit them for a Banting version.
1.5 cups sugar free toasted muesli or use a carb free version made with toasted seeds and nuts
1/2 cup coconut
60g ground almonds
1/3 cup dried cranberries (optional or replace with seeds for a Banting version)
60g chopped pecan nuts
1/3 cup wholewheat or coconut flour (Banting)
1/2t cinnamon
125g butter
1/4 cup honey (for Banting this will use up your daily limit depending on how many biscuits you eat)
1t vanilla extract
1T milk
1 egg
Preheat the oven to 180C.
Grease a 25 x 15 cm baking tin.
Mix the muesli, coconut, ground almonds, cranberries, nuts, flour and cinnamon together. Melt the butter and honey, but do not boil. Add to the dry ingredients. Beat the egg, add the vanilla and milk. Then add to the rest of the ingredients. Spoon into the baking tin and bake at 180C for 15-20 minutes or until firm and golden.
Top with melted dark chocolate for a decadent snack.
Tip: don't forget to take into account the honey content for Banting and calculate this from your daily allowance.
