Pork and Apple Casserole
A healthy, heart meal for your family. Serves 4.
45g butter1 onion finely chopped
500g Pork Collar Fillet trimmed, cut into 2cm cubes
3 large cooking apples peeled and sliced
1 carrot cut into thin strips
750ml chicken stock
1 bay leaf
1 tsp dried sage
250g canned chopped tomatoes
2 apples cubed
Melt 30g of butter in a large frying pan; add the onion and the Pork and cook, stirring for 5 minutes. Drain the excess fat and add cooking apples, carrot, stock, bay leaf, tomato and sage.
Bring to the boil then simmer for 1 hour until the pork is tender and cooked through.
Melt the remaining butter in frying pan and sauté apple cubes gently until cooked.
Use this apple to garnish your dish.
Serve with mashed potato.
