Italian Sausage and Pea Pasta
Serves 4
40ml butter
40ml olive oil
2 finely chopped cloves of garlic
20ml fennel seeds
4 Italian sausages
425g tinned tomatoes
100ml water
420g tinned peas drained
3T finely chopped parsley
400g pasta cooked al dente and drained
20ml olive oil
1 finely chopped chili, seeds removed (optional)
Saute the onion in the melted butter and olive oil. Add the fennel seeds and cook for a minute. Slice open the sausages, place the meat in the pot and toss to combine with the garlic. Cook for 10 minutes. Add the tomatoes and water. Cook for 20 minutes. Add the peas and continue to cook for 10 minutes. Season and sprinkle with parsley.
Place the pasta in a serving bowl and pour in the sauce. Stir through a seeded finely chopped chili, 20ml of olive oil and grated Parmesan cheese. Serve warm
