The Ultimate Comfort Food Pudding
This recipe has been a family favourite for 30 years.
1 cups flour
1 cup sugar
1 cup milk
1t bicarbonate of soda
1t vinegar
1T butter
1 egg
pinch of salt
1t apricot jam
Preheat the oven to 350F.
Mix the flour, salt and sugar. Melt the butter and apricot jam. Mix the milk, vinegar and bicarb. Add to the dry ingredients. Add the lightly beaten egg. Mix together. Pour into a large baking tray.
Bake at 350F for 45 minutes.
Sauce
1 cup cream
1/2 cup sugar
1 cup butter
1/2 cup boiling water
1t vanilla
Mix the above ingredients over a low heat. Pour over the pudding when you take it out the oven.
