Pasta with Bacon, Olives and Peppadews

Easy to make and delicious to eat. Serves 6

600g Rigati or Penne Pasta
250g Bacon finely chopped
2 sprigs fresh thyme
50g sundried tomatoes chopped
50ml Peppadews coarsely chopped
50ml black olives, stoned and chopped
2T olive oil
20g fresh rocket
freshly grated Parmesan to serve

Cook the pasta. Reserve some cooking liquid for the sauce.
Fry the bacon until crispy. Add the tomatoes, peppadews, olives and thyme. Stir and add a ladle of cooking liquid. Allow to thicken slightly.
Place the pasta in a serving dish, add the olive oil, season and toss. Add the ingredient from the pan. Serve with rocket and a generous helping of grated Parmesan.
