Notes from my Kitchen 21 - Chocolate Tray Bake
Tomorrow is baker’s day at school for my boys.
As a change from the usual vanilla cupcakes iced with the week’s theme, I have
decided to make this cake very popular with Moms, as it is easy to make, and
with children, who devour it!
The mixture makes a large roasting tray of cake
which you ice when it comes out of the oven. The cake is beast made a day
ahead. It is moist and delicious and iced with a light chocolate icing.
First Bowl
1 cup sugar
½ cup cocoa
½ cup plain yoghurt
1t vanilla
Second Bowl
1 cup sugar
4oz butter
2 eggs
Cream well together
Third Bowl
2 cups flour
1t bicarbonate of soda
1t baking powder
¼t salt
Sift well
Fourth bowl
1 cup plain yoghurt
Preheat the oven to 180C. Grease a large oven
roasting tray.
Mix bowl 3 & 4. Mix into bowl 2, a third at
a time. Beat in bowl 1 and mix well. Pour into the baking tray. Bake at
350F/180 for 35-40 minutes.
