Notes from my Kitchen 21 - Chocolate Tray Bake



Tomorrow is baker’s day at school for my boys. As a change from the usual vanilla cupcakes iced with the week’s theme, I have decided to make this cake very popular with Moms, as it is easy to make, and with children, who devour it!

The mixture makes a large roasting tray of cake which you ice when it comes out of the oven. The cake is beast made a day ahead. It is moist and delicious and iced with a light chocolate icing.

First Bowl
1 cup sugar
½ cup cocoa
½ cup plain yoghurt
1t vanilla

Second Bowl
1 cup sugar
4oz butter
2 eggs
Cream well together

Third Bowl
2 cups flour
1t bicarbonate of soda
1t baking powder
¼t salt
Sift well

Fourth bowl
1 cup plain yoghurt

Preheat the oven to 180C. Grease a large oven roasting tray.

Mix bowl 3 & 4. Mix into bowl 2, a third at a time. Beat in bowl 1 and mix well. Pour into the baking tray. Bake at 350F/180 for 35-40 minutes.

Icing
1 cup icing sugar
1T cocoa
hot water to bind.

Mix the ingredients for the icing and ice the cake when hot.

This cake keeps well in an airtight container, even after you slice it.
