Notes from my Holiday Kitchen - tips for cooking on holiday

I have just returned from a 4000km road trip. I tasted good food and bad food, and I cooked in the kitchen of our holiday let at the sea. I used the easiest recipes, my husband helped to barbecue and I found some short cuts. I thought I would share some ideas with you.

Roasted vegetables are a great way to cook. Wash them, chop them (no need to peel), drizzle with olive oil and bake at 200C for an hour. Cook them all in one large oven dish and save on washing up. Our favourites are sweet potato, butternut and courgettes. Serve with barbecued meat or a roast cooked in the oven at the same time.

Cut new potatoes in half and roast in a little olive oil for some holiday roast potatoes. Bake at 200C for an hour an turn them once. No peeling or par boiling required!

For a great lunch dish that children enjoy, adapt my pasta bake recipe and add tinned tuna or cooked mince.

Serve with a salad.

We used my fillet recipe and cooked it on the barbecue, served with roasted vegetables. Alternatively serve with holiday roast potatoes and a salad.

For dessert I baked my favourite chocolate brownie recipe in a round glass vegetable dish and served it with homemade ice-cream. I replaced the tin of condensed milk with a tin of caramel treat. So easy to make, even on holiday, and tastes much better than most ice-cream desserts sold at the supermarket!
