Honey, Lemon and Mustard Marinated Chicken

Marinades are a great way to add flavour to bland meat such as chicken breast. Try this recipe and serve with your favourite side dish or the potato gratin recipe I suggest below. Serve 4

Chicken
4-6 chicken breasts
3T clear honey
2T wholegrain or Dijon mustard
2t freshly squeezed lemon juice
2t sesame oil
salt and pepper to taste
1t freshly chopped thyme

Flatten the chicken breasts. Mix all the ingredients together and marinade the chicken overnight in the fridge. Return to room temperature and fry in a little olive oil for 4 minutes on each side (depending on how thick they are).

Tip: These can be sliced and used in a chicken salad

Potato Gratin
750g potatoes, peeled and finely sliced - use a food processor
1 red onion finely sliced - use a food processor
200ml chicken stock
100ml single cream
30g freshly grated Parmesan

Preheat the oven to 200C
Fry the onion in  a little olive oil. Place in an oven dish together with the remaining ingredients. Bake at 180C for an hour or until the potato is cooked through.
