Notes from my Holiday Kitchen - Marinated Chicken Barbecue
This recipe is so easy and your husband will hopefully barbecue the meat, leaving you to make a delicious side dish - I recommend a sweet potato bake, see the recipe link below. You can use potatoes in the recipe instead of sweet potatoes. Serves 6.
It is worth the effort to infuse the lemon zest in the olive oil as it imparts a lovely flavour or use lemon flavoured oil. Keep the rest of the lemon for the juice in the fridge until needed.
8 chicken thighs
1/4 cup olive oil
juice and zest of 1 lemon
1T dried thyme
1T Worcestershire sauce
1T dijon mustard
Salt and pepper
Infuse the lemon zest in the olive oil overnight. Mix the ingredients together and marinate the chicken overnight.
Bake at 180C for an hour or barbecue until cooked.
Banting: Serve with cauli-mash
