Notes from my Holiday Kitchen - Caramel Cookies and Cream Ice-Cream with Mint Chocolate Chips
My extended family came to lunch while we were staying at our holiday let. Finding a dessert that is easy to make, light on washing up, tastes great and feeds 16 is not easy to find. This is the one I make and serve with sugar cones. I double these quantities for large gatherings and buy extra cones for second servings!
1 tin caramel treat (caramelised condensed milk or one quantity homemade caramel sauce)
500ml whipped cream
2 egg whites beaten
100g mint crisp chocolate, grated
150g packet coconut biscuits broken into bite size pieces
Place the caramel in a large mixing bowl. Fold in the whipped cream. Add the chocolate and cookies. Fold in the beaten egg whites. Place in a container and freeze overnight.
