Pork Chops with Caramelised Apple

This recipe is very simple and quick to make, yet the combination of pork, apple and Gruyere cheese really makes a statement. This recipe serves 4.

2 onions finely chopped
110g butter
350g apples, cored, peeled and quartered
30g caster sugar
4 pork chops
60ml double cream
250g Gruyere

Preheat the oven to 200C.

Heat half the butter in a frying pan and cook the onion. Add the apple and sugar and cook until golden brown. Add the cream and season well.
Place the remaining butter equally on each pork chop, and cook in a heat proof dish in the oven for 20 minutes, turning half way. Cover with the cream sauce and cook for another 5 minutes. Place the grated cheese over the chops and place under the grill until melted.
Garnish with fresh sage and serve with roasted sweet potato.

Tips: use sliced pork fillet and double the sauce ingredients for a dinner party delight.
Keep the accompanying vegetables simple as this dish is rich.
Use caramel sugar for a sweeter, more intense taste.
Add some apple cider to the cream sauce.
Replace the apples with pears and the Gruyere with blue cheese.
Sprinkle some cinnamon into the cream sauce.
