Easiest Strawberry Ice-Cream
With summer approaching and berries coming into season, this ice-cream is an easy, no fuss way to give your children a treat. It is the perfect accompaniment to a picnic - think of frozen strawberries and cream in a waffle cone!
500g fresh strawberries
150g icing sugar
4ml lemon juice
600ml double cream
Place 400g of strawberries and the icing sugar in a food processor. Blend together and add the lemon juice, giving one last wizz.
Beat the cream and fold it into the strawberry mixture with a spatula.
Chop the remaining strawberries by hand to the size you like and stir into the ice-cream. Freeze for at least 4 hours in a container that can withstand the cold. Makes about 1.5L.
