Notes from my Kitchen 11 - Book Club Morning Tea

I have dedicated the last two days to preparing for and hosting a morning tea for my book club. In addition to catering for the members of the club, I also had to cater for their children who accompanied their mothers during the school holidays. I decided to make a few menu items that suited both adults and children and halved my work load!

On the menu.........

Chocolate Carrot Cake - a double layered cake with rich chocolate butter cream icing
Vanilla Cupcakes - decorated with pink flowers for the Moms and chocolate buttons for the children
Pecan Nut and Cinnamon Biscotti - the recipe is on my blog, not one was left!!
Roasted Butternut and Feta Mini Quiches - to which I added fresh thyme!
Mini Pizza Pastries - using the remaining pastry from the quiche, I added homemade pasta sauce and mozzarella and baked them for 20 minutes. Perfect for both adults and children.
Popcorn - a very easy part of the menu, but loved by children.

Using a pretty floral table cloth and chintz style tea cups, linen napkins, a bowl of fresh roses, cake forks and pretty glassware, I serve the above with filtre coffee and iced tea.

Planning is a key element of entertaining. I make lists when I have a large crowd coming over.

On Thursday I baked the biscotti and stored it in an airtight container. I baked the chocolate cake and cupcakes and iced them. They also went into containers overnight, I place a fresh pink rose on the cake just before serving. I then made the pastry, rested it and rolled it out. I placed 12 pastry circles in muffin tins for the quiches and the rest on baking trays for the pizzas. I covered them with cling film and placed them in the fridge. I also arranged flowers for my house and table, I am lucky to have a wonderful rose garden. I placed clean towels and vanilla and ginger hand soap in the guest loo and gave my verandah a good sweep and wiped down the furniture.
On the morning, I heated the oven, assembled and baked the quiches and pizzas, the pastry can be taken straight out of the fridge and baked. I made the popcorn. Then I set the table, prepared the iced tea, plated up the food and set it out 15 minutes before the guests were due to arrived. I boiled the kettle and filled 2 flasks, setup the coffee maker and switched it on when the guests arrived. I plumped the cushions, and enjoyed the morning as all was prepared in advance!
