Penne with Artichoke and Walnut Sauce

This combination is brought together with the addition of tomatoes, Parmesan and sour cream to make a delicious topping for your favourite pasta.

400g penne, cooked al dente
2t olive oil
2t butter
1 clove garlic crushed
400g can artichoke hearts, drained and chopped
400g can chopped tomatoes
3T fresh basil leaves
1 cup sour cream
40g grated Parmesan
100g roasted walnuts

In a large frying pan add the oil and butter. Saute the garlic and artichokes for 5 minutes, stirring constantly. Add the tomatoes and cook uncovered for 20 minutes. Add the sour cream and heat it through. Season and add the basil, parmesan and walnuts to serve.

Add cooked chicken for a more substantial meal.
