TMM Meals: Seed Crusted Salmon

This meal offers a tasty way to enjoy seeds that are good for us. Add fresh salmon and you are well on your way to meeting your healthy oil requirements. I am a great fan of rubs or pastes to flavour meat and this recipe has a unique one made with seeds - similar to pest but without the calories of nuts and cheese.

1/2 cup mixed seeds (try sesame, linseed and sunflower)
1 clove garlic finely chopped
1/2 cup chopped dill tips, parsley or coriander
60g butter or 4T olive oil
4 salmon fillets

Toast the seeds lightly and combine with the garlic and butter. Rub onto the skinless side of the salmon. Fry the salmon skin side down for 6-8 minutes. Try not to turn it or cook for less time on the side with the flavour.

Serve with a salad made with blanched green beans and broccoli. Add cress and edible flowers and serve drizzled with olive oil and lemon wedges on the side.
