Banting: almond and coconut balls
This recipe is a no bake snack for those Banting or on a Low carb diet. They are easy to make, taste good and are a welcome treat.
- 1 cup almond butter
- ½ cup coconut flour
- ½ cup shredded coconut, plus extra for coating
- 4 Tbsp. coconut milk
- 4 Tbsp. coconut oil
- 2t Stevia/allowed sweetner
- Add all the other ingredients to a food processor and blend well.
- Roll the mixture into balls, and coat in coconut.
- Allow to set in the fridge for 30 minutes.
