Banting: almond and coconut balls

This recipe is a no bake snack for those Banting or on a Low carb diet. They are easy to make, taste good and are a welcome treat.

  • 1 cup almond butter 
  • ½ cup coconut flour
  • ½ cup shredded coconut, plus extra for coating 
  • 4 Tbsp. coconut milk
  • 4 Tbsp. coconut oil
  • 2t Stevia/allowed sweetner
  1. Add all the other ingredients to a food processor and blend well.
  2. Roll the mixture into balls, and coat in coconut.
  3. Allow to set in the fridge for 30 minutes.
