Sausage and Courgette Lasagne

If you have a craving for the taste of lasagne, but are on a no carb eating plan try this recipe. It is easy to make and bakes in the oven in one pan so there is not much to wash up.
serves 4

6 large courgettes cut length ways with the seeds scooped out
1T olive oil
1 small onion finely chopped
4 Italian sausages, casing removed
12T cream cheese
400ml Pasta sauce
300ml grated mozzerella cheese
salt and pepper

Preheat the oven to 220C. Fry the onion in the oil, add the sausages and season. Cook for 8 minutes, stirring to ensure the meat is cooked evenly. Place the courgettes in an oven dish with the skin facing down. Place a tablespoon of cream cheese in each. Fill with sausage. Pour over the pasta sauce and top with grated cheese. Cover with foil and bake for 30 minutes. Remove the foil and bake for a further 5 minutes. Garnish with freshly chopped herbs and serve with roasted pumpkin.
