Roasted Cauliflower with Parmesan

This recipe takes cauliflower to a new level. Combine with other roasted vegetables for variation. Delicious with Lamb Chops.
Double the recipe to feed a family of four.

4 cups cauliflower
1T olive oil
1/2t dried herbs
1T balsamic vinegar
1/4 cup freshly grated Parmesan
salt and pepper to taste

Preheat the oven to 200C.
Season the cauliflower and mix with the oil and dried herbs. Cook for 15-20 minutes until starting to turn golden. Remove from the oven and coat in vinegar and cheese. Bake for another 5-10 minutes until crispy and any moisture has evaporated.
