Low Carb Kebabs
These are best served at a barbecue, perfect for guests who are Banting and are a mini meal in one! They are equally good roasted in the oven if turned regularly to ensure they cook evenly. This recipe makes 6 skewers.
18 cubes of beef
3 large good quality sausages cut into 12 pieces
large red onion cut into 6 wedges
6 rashes thickly sliced streaky bacon cut into 18 pieces or roll up normal bacon slices and place on the skewer
large red bell pepper cut into pieces that can be threaded onto a skewer
olive oil
lemon juice and zest
salt and pepper
Marinade your beef in the olive oil, lemon juice and zest, and season with salt and pepper. I do this the day before. Add garlic and chilli if you like. I start with some sea salt, chopped rosemary and lemon rind, using a pestle and mortar I crush them together. Then I add the olive oil and lemon juice. Pour over the beef and marinade overnight.
Soak your skewers in water if using wooden ones. I have some beautiful metal ones that I got as a gift.
Then thread the meat, onion and peppers onto the skewers. If baking them preheat the oven to 220C. Turn the oven down to 200C when you place the kebabs in the oven. Cook for about 20 minutes, turning the skewers until the meat is cooked evenly.
