Banting Pumpkin Seed Pesto

Need a change from basil pesto? Try this recipe with Banting friendly ingredients. Pestos are a great way to flavour chicken, pork or beef. This recipe is not as rich as the recipes containing nuts and cheese.

1 cup fresh coriander or parsley finely chopped
1/2 cup olive oil
1/3 cup pumpkin seeds (toast them lightly beforehand for a nutty flavour)
2T lime juice
1 clove garlic
1/4t smoked paprika
Salt and pepper to taste

Place the seeds in a food processor and grind. Add the remaining ingredients and blend. Use immediately or store in a sterilised bottle in the fridge for a week.
