Coconut Meringue Biscuits
These are part meringues, part macrons and part coconut ice. I adapted a recipe that used ground nuts and egg white to make a more cost effective biscuit that can be made with ingredients you are likely to have in your cupboard.
100g dessicated coconut
1/4 cup coconut or plain flour
2 egg whites
1/2 cup sugar
1/2t vanilla extract
Preheat the oven to 170C.
Grease a biscuit tray.
Beat the egg whites until frothy. Add the sugar and beat for 3 minutes. Fold in the coconut, flour and vanilla. Place the mixture in a piping bag with a wide flat nozzle and pipe the biscuits onto a tray. Bake for 15 minutes or until slightly brown. Allow to cool and store in an airtight container.
Dip one side in melted chocolate for a decadent treat.
