Cinnamon and Honey Semi Fredo

This is creamy without being over sweet and balanced by the cinnamon flavour. My children love it with homemade jelly(jello), but I think the perfect partner for this is apple pie. It tastes as good as ice-cream but you don't have to cook it or use an ice-cream maker. Use good quality double thick cream for the best results.

4 eggs separated
200g sugar
1/4 cup honey
1t vanilla extract
1T ground cinnamon
600ml double cream

Beat the egg yolks and sugar together until pale and doubled in volume. Beat the cream and gently fold in the honey, cinnamon and vanilla. Fold the cream mixture into the egg mixture. Beat the egg whites to a soft peak. Fold into the cream mixture, a little at a time. Place in an ice-cream container and freeze for at least 4 hours.
