Banting Pumpkin Frittata
Do you need a low carb version to your favourite quiche? Try a frittata. This easy recipe is baked in the oven and is a good way to use left over vegetables.
4 eggs
50ml milk
1 large wedge pumpkin roasted and cut into cubes
75g feta cheese cut into cubes
1/4 onion finely chopped and sauteed
1t finely chopped parsley (optional)
salt and pepper to taste
Preheat the oven to 170C
Grease 6 muffin tin moulds.
Place an equal amount of onion, pumpkin and cheese in each muffin
hole.
Whisk together the eggs and milk in a large jug. Season with salt and pepper and add parsley. Pour the egg mixture into each muffin hole ¾ of the way up. Bake for 30-35
minutes until lightly browned.
