Notes from my Kitchen 18 - Homemade Granola
This recipe for Granola is from my book Good Food for your Family. I use it for breakfast and for baking, and it is a family favourite. My children love this served with yoghurt or
warmed milk. Their favourite dried fruit combination is cranberry and apple,
mine is blueberry and banana. It could not be simpler to make and tastes
delicious, without too much added sugar and salt!
230g porridge oats
160g nuts such as chopped pecans, cashews or flaked almonds
80g dried fruit chopped
60g desiccated coconut
2T dark brown sugar
2T honey
20ml vegetable oil
Pinch of cinnamon
Preheat the oven to 130C
Mix the oats, nuts, sugar, cinnamon and coconut in a large bowl. Combine
the honey and oil and pour over the dry ingredients. Mix well. Place on two
lightly greased baking trays and bake for 75 minutes, turning the mixture every
15 minutes to ensure it cooks evenly.
Allow to cool and mix with the dried fruit. Store in an airtight
container for up to 2 weeks.
