Food Around the World - Oriental Chicken with Lemon Grass

This has authentically Eastern ingredients, but is very simple to make. It is the type of cooking that allows the flavours of the ingredients to shine.
I love this with noodles or delicate Jasmine rice. It is the type of recipe you can make your own, by adding ingredients you enjoy and adjusting the heat with the amount of chilli you add. Serves 4

3T oil
2T spring onions, finely chopped
1 clove garlic, finely chopped
1 stalk lemon grass, with the hard outer layer removed
500g chicken breasts, sliced
1 chilli, seeded and finely chopped
2T fish sauce
2T soy sauce
1T desiccated coconut
100ml cream or coconut milk
1/2 cup sugarsnap peas and bean sprouts

In a hot pan, heat the oil and saute the onion, garlic and lemon grass. Add the chicken and cook for about 5 minutes. Add the rest of the ingredients and cook for another 5 minutes until the chicken is cooked through. Remove the lemon grass before serving.
