Macadamia Nut Brownies
This brownie recipe is for chocolate lovers! Using macadamia nuts gives
extra richness, as does the mascarpone. They are perfect for dessert or served
with a cup of coffee.
45g butter
375g dark chocolate
120g butter
1 ½ cups brown sugar
3 eggs
¾ cup of flour
2t vanilla extract
¾ cup chopped macadamia nuts
½ cup mascarpone
Preheat the oven to 180C.
Melt the 45g butter and chocolate in a double boiler.
Beat the sugar and 120g butter until light and fluffy. Add the eggs,
one at a time, beating well after each addition. Sift the flour and adding a
third at a time. Mix in the vanilla, nuts, mascarpone and chocolate.
Pour into a greased brownie tin and bake for 35-40 minutes. Cool and
cut in the pan. Dust with cocoa or icing sugar to serve.
Tip; make a brownie Sunday. Place a brownie in your bowl. Top with
vanilla ice-cream, caramel sauce, sliced bananas and nuts!
