Fragrant Coconut Roast Chicken
After spending an entire day baking for my son's party, I needed a meal that was quick to prepare, but revived me from my hard work. I came across this delicious roast chicken recipe, changed it slightly, and decided it was the one. I always have a chicken in my house and I boiled up some peas from the garden, and made a salad, to go with it. Such a simple solution, with so much flavour.
1 whole chicken
1 large red onion roughtly chopped
1 can coconut milk
2T curry paste
1T smoked paprika
2T tomato paste
a few sprigs of fresh lemon thyme
Preheat the oven to 180C.
Rub the chicken with the paprika and curry paste. Place in a roasting pan, together with the thyme and onion. Mix the coconut milk and tomato paste and pour over the chicken. Roast for 1 hour 30 minutes, basting frequently. The chicken is cooked when the juices run clear.
Tip: add some potatoes rubbed with a little olive oil to the roasting pan for some delicious potato wedges to go with your meal!
