Pepper Crusted Fish Fingers
200g fresh fish such as salmon cut into fingers
1t freshly ground black pepper
2T olive oil
1T honey
1t lemon thyme leaves
juice and zest of 1 lime
breadcrumbs
sesame seeds
Marinade the fish in the pepper, olive oil, honey, thyme and lime juice and zest, rubbing the marinade into the fish to infuse the flavour.
Coat the fish in breadcrumbs and/or sesame seeds and shallow fry turning to ensure it cooks evenly. Serve with potato wedges and tarter sauce.
